Trial Run

We often get stuck in ruts in regard to meals  in our neck of the wood…C insists that this isn’t a bad thing, we just know what we like and stick with it…I on the other hand have been wanting to branch out and finally took the plunge and tried a new recipe that caught my eye in Parent’s Magazine.

Needless to say, it was delicious…so I felt the need to share.

Grilled Chicken Sandwich (minus the typical lettuce & tomato)

1.Grill  Chicken Breasts

2.In a bowl combine 2 tbs honey, 2 tbs. fresh mint, 2-3 chopped kiwi and mix together.

3. Slice 1 apple into thin slices

3. Spread honey mustard on one side of bun (we found FANTASTIC pretzel buns at Central Market) and then place 1-2 apple slices on top of the honey mustard. Then place the grilled chicken on top of the apple, sprinkle some cheese (we didn’t have any cheese to slice). Then spoon the kiwi, mint & honey mixture on top. Place top of  bun on….

4. ENJOY!!!

We enjoyed the sandwiches with sweet potato fries…I loved it…C is still warming up to it, but it really was a good, simple and tasty summer meal!

(Both C and I commented that the pretzel rolls really made the meal)
